Methi Mango Paneer Bhurji

Paneer Bhurji is a very delicious and a popular recipe of paneer. It’s very healthy and very easy to make and can be made in a jiffy. It’s good to use fresh and homemade paneer for this recipe.
Today, I made this for lunch with a sweet twist. I have added some ripe sweet mangoes. It was just an impulse. After I added the mangoes, I was actually little apprehensive. But to my delight and relief, it turned out to be very delicious:)
 

Ingredients

Chopped onions- 1 cup
Chopped methi( fenugreek) leaves- 1cup
Chopped tomatoes- 1 cup
Crumbled paneer ( cottage cheese) – 1 cup
Chopped ripe mangoes- 1/2 cup
Oil- 1 tbsp
Jeera ( cumin) – 1 tsp
Turmeric powder- 1/2 tsp
Coriander powder- 1 tsp
Jeera powder- 1 tsp
Red chilli powder – 1 tsp
Garam masala powder- 1 tsp
Chopped coriander leaves- 1 tsp
Method
Heat oil in a pan. Add jeera. When it starts spluttering, add the chopped onions. Sauté till becomes pale. Now add the chopped methi leaves and sauté for few mins.

Add the chopped tomatoes, turmeric powder, red chilli powder, coriander powder, jeera powder and salt to taste. Mix well and sauté for few mins. Add 1 cup water and let it boil for few mins.

 
Add the crumbled paneer and chopped mangoes and mix well. Mix well and check for the seasonings.
 
 Let it simmer on a medium flame for 10 mins or till the oil start floating on top. Add the garam masala and mix well. Garnish with coriander leaves and serve hot with rotis:)
