Chickpeas and Beet Masala Rice

When you are not in a mood for an elaborate cooking,but want to cook a balance meal, then one pot meal is the best option. Made one such dish today.
This is my own recipe. I made Chickpeas and Beet Masala rice. This is a very balanced, wholesome, colourful and a nutritious one pot meal.
 
 Ingredients
 Basmati rice- 11/4th cup
Boiled chickpeas( black)- 2 cups
Boiled and chopped beetroot- 11/2 cups
Chopped onion- 1/2 cup
Oil- 1 tbsp
Melted ghee- 3 tsps
Bay leaf- 2
Red chilli powder- 1 tsp
Turmeric powder- 1/2 tsp
Jeera powder- 1 tsp
Chopped coriander leaves- 2 tbsps
Salt to taste
To roast and grind
Coriander seeds- 2 tsps
Jeera- 1 tsp
Pepper- 1 tsp
Cloves- 4
Cinnamon- 1/2 inch
Cardamom- 4
Star anise- 1
Method
Wash and soak basmati rice for 15 mins. Drain and keep it aside.
Roast all the ingredients mentioned for roasting, cool and grind to a powder.

 Heat oil and a tsp of ghee in a heavy bottom pan. Add the bay leaf. Then add the chopped onions. Sauté till the onions turn pale. Add the chopped and boiled beetroot, boiled chickpeas, red chilli powder, jeera powder, turmeric powder and salt to taste.
Mix well, sauté for few mins and then add the drained rice, mix well and sauté for few more mins.
 
Add 21/2 cups of water. Mix well and check for the seasonings. Close the pan with s lid, reduce the flame and cook till the rice becomes soft and dry.
 

 Heat the remaining 2 tsps of ghee in a pan. Add the powdered masala and sauté for few seconds. Add this and lemon juice to the rice and mix well.
Garnish with chopped coriander leaves and serve hot with raita and chips:)
