Carrot halwa or Gajar halwa is a very famous and a traditional North Indian dessert, mainly Punjab region. The Gajar ka Halwa was first introduced during the Mughal period and the name originates from an Arabic word “Halwa”, which means “sweet”and it is made from carrot (in Hindi: Gajar) so that it is known as Gajar ka Halwa (meaning pudding of carrot or Halwa of carrot).
The main ingredients used for making this dessert are carrots, milk, sugar, ghee and some nuts. It can be served cold or hot.

Ingredients
Grated carrots- 3 cups
Milk- 1 cup
Ghee- 4 tbsps
Sugar- 2 tbsps or to taste
Slices almond- 1 tbsp
Cardamom powder- 1/2 tsp
Milk powder( optional)- 1 tsp
Method.
Heat a heavy bottom pan. Add a tablespoon of ghee. To the hot ghee, add the grated carrots and cook till u get a nice aroma( 3-4 mins).
Now add the milk, mix well.
In low flame, cook till the carrots become soft and dry. Keep stirring in frequent intervals.
At this stage, add sugar and 2 tbsps of ghee. Cook on a low flame for 10 more mins. Add a tbsp of melted ghee and cardamom powder and mix well. Milk powder can be added and mixed at this stage. Using milk powder is optional.
Garnish with almond flakes and serve hot or cold.
