Peanuts and Sesame Rice

The tiny sesame seeds are actually nutrient rich, power packed ingredient.

Sesame is among the seeds rich in quality vitamins, and minerals. They are very good sources of B-complex vitamins such as niacin, folic acid, thiamin (vitamin B1), pyridoxine (vitamin B6), and riboflavin,
Calcium, iron, manganese, zinc, magnesium, selenium, and copper.

Just a hand full of sesame a day provides enough recommended levels of phenolic anti-oxidants, minerals, vitamins and protein.

Peanuts are rich source of protein and good fats.

When combined with rice, it helps to create a nutritionally complete and balanced recipe. It’s very ideal for packed lunch.

Ingredients

Cooked rice- 4 cups
Roasted peanuts- 3 tbsps
Sesame seeds- 2 tbsps
Red chillies- 4
Green chillies slit- 2
Ginger chopped- 1 tsp
Lemon- 1
Mustard- 1 tsp
Urad dal- 1 tsp
Curry leaves- few
Hing- 1/4th tsp
Turmeric powder- 1/2 tsp
Seasame oil- 2 tbsps
Salt to taste

Method

Dry roast peanuts, sesame seeds and red chillies till peanuts and sesame become golden in colour. Cool and grind to a powder.

Heat oil in a pan.
Add mustard. When it starts spluttering, add urad dal, curry leaves, green chillies, ginger, hing and turmeric powder. Sauté for a min.
Add it to the rice.
Add salt to taste and the ground powder to the rice and mix well.
Now add juice of one lemon to the rice, mix well, garnish with roasted peanuts and sesame seeds and serve hot with raitha and Papad 🙂
