Idli is probably one of the best breakfast recipe. It is healthy as it has a combination of good carbohydrates and protein, it’s fermented which enhances the probiotic content, it is steamed and it’s easy to make once the batter is kept ready.
Hence it’s very common in Tamil Nadu to have Idli as breakfast everyday with different varieties of chutney and sambar.
When something has to be made everyday, it inspires to create some variety. There are many varieties of Idlies.
Use of tuvar dal is not known to many. I tried this recipe for the first time yesterday and have to say that am really happy that I did:)
Ingredients
Idli rice- 1 cup
Tuvar dal- 1/2 cup
Green chillies- 3-4
Grated coconut- 1 tbsp
Hing – pinch
Oil- 1 tsp
Mustard- 1 tsp
Cooking soda- 2 pinches
Method
Wash and soak rice and dal together for 3-4 hours.
Grind to a smooth batter along with green chillies, coconut and hing.
Add salt, mix well and keep it overnight for fermentation.
( or 12- 15 hrs)
Before making the idlies, heat oil in a pan. Add mustard. When it stops spluttering, add it to the batter and mix well.
Grease the Idli plates. Mix soda to the batter, pour it in greased Idli plates and steam till done( will take 12-15 mins).
Once the steam subsides, gently remove the idlies, transfer to a serving dish and serve hot with chutney and sambar:)

Thank you Latha. I have just added 2 pinches of soda. Tuvar dal when ground does not become as light and fluffy as urad dal. Thats why little soda is added. Can be avoided if not desired 🙂
