Palak Paneer is a very famous dish from the North Indian Cuisine. There are many varieties of recipes for Palak Paneer. I follow Nita Mehta’s recipe. It’s the best of all the palak paneer recipes that I have tried. The goodness and earthy flavour of Palak is beautifully complimented by the rich and creamy paneer. It’s one of my family’s most favourite dish 🙂
Ingredients
Chopped Palak- 4 cups
Chopped coriander leaves- 3/4th cup
Green chillies- 3-4
Dried Methi ( fenugreek) leaves- 1 tbsp
Sugar- 1/4tsp
Salt to taste
Paneer – 200 GMs
Onion- 1
Besan ( chick pea flour) – 2 tsps
Ginger juliennes- little
Garam masala- 1/2 tsp
Ghee- 2 tsps
Method
Wash Palak and coriander leaves well.
Wash and chop green chillies.
Peel, wash and chop onions.
Cut paneer into cubes.
Crush the dried methi leaves. Discard the hard stems.
In a pan add chopped palak, coriander leaves, green chillies, crushed methi leaves
and sugar. Cook everything together till the palak becomes tender.
Cool and grind this to a smooth puree. Add 1/2 cup water and salt to taste and mix well.
Add the paneer cubes to palak puree and let it simmer on a medium flame.
Cook the chopped onions in water till it becomes soft. Cool the onions.
Grind the onions along with 2 tsps of besan to a smooth paste.
Dilute this paste with little water and cook till become thick and starts coating the spoon.
Now add this to the simmering palak puree and mix gently. Take care not to break the paneer. Let it simmer for few more mins.
Heat ghee in a pan. Add the ginger juliennes and garam madam powder. Pour the tempering over the Palak paneer and serve hot with roti/ naan/ paratha/ rice 🙂
