Pulao (sometimes spelt pulav) is a dish consisting of rice and commonly including peas, potatoes, beans carrots, lamb, beef, or chicken. It is usually served on special occasions and weddings.
It’s very easy to make and can be made in a jiffy. The vegetables used for making pulao is actually one’s choice. Today I have used baby corn and shallots.
Ingredients
Basmati rice- 11/2 cups
Sliced baby corn – 11/2 cups
Sliced shallots( madras onions) – 11/2 cups
Garlic cloves- 12-15
Butter- 1 tbsp
Bay leaf- 1
Cardamom- 4
Cloves- 4
Cinnamon- 1 inch
Star anise- 1
Salt to taste
Method
Wash and soak rice for 15-20 mins.
Crush the garlic cloves.
Heat butter in a heavy bottom pan. Add bay leaf, cardamoms, cloves, cinnamon and star anise. Sauté for few seconds and add the crushed garlic. Sauté for few seconds again and then add sliced shallots.
Sauté till the onion turns pale and add the sliced baby corn. Sauté for few more mins.
Drain the soaked rice well and add it to the vegetables. Sauté till the rice is well coated with butter.
Add salt to taste and 3 cups of water. Mix well. When the water starts boiling, reduce the flame, close the pan with a lid and cook till the rice becomes soft and dry. Stir the rice once in between.
Serve the pulao hot with dal and raita 🙂
