My school friends had come over for dinner yesterday. The whole day was spent in the kitchen yesterday. So I was not in a mood for any elaborate cooking today. Had a lot of leftover rice. I used that to make a quick, healthy, spicy and yummy capsicum and walnut stir fried rice which I served with cucumber raita and chips:)
Ingredients
Cooked rice- 2 cups
Chopped capsicum- 1 cup
Sliced Shallots- 1 cup
Sliced garlic- 1/4th cup
Walnuts- 1/4th cup
Oil- 1 tbsp
Ghee- 1 tbsp
Mustard- 1 tsp
Split urad dal ( ullundhu)- 2 tsps
Chana dal ( Kadalai Paruppu)-2 tsps
Curry leaves- few
Turmeric powder- 1/2tsp
Red chilli powder- 1 tsp
Coriander powder- 2 tsps
Jeera powder- 1 tsp
Amchur powder ( dry mango)- 1/2 tsp
Salt to taste
Method
Heat oil in a pan. Add mustard. When it starts spluttering, add urad dal, chana dal and curry leaves. Sauté for few seconds and then add walnuts. Sauté for a min.
Add the sliced shallots and garlic and little salt. Sauté till the shallots turn pale.
Now add the chopped capsicum, turmeric powder, red chilli powder, coriander powder, jeera powder, amchur powder and salt to taste. Mix well and cook till the capsicum becomes tender.
Add the boiled rice and ghee and mix well. Check for the seasonings. Stir fry on a high flame for few mins.
Serve hot with raita and chips:)
Looks good! Gives me the idea to include nuts and seeds in my fried rice next time!
