Olivier salad is a traditional salad dish in Russian cuisine which is popularly known as Russian salad. It is usually made with diced boiled potatoes, carrots,green peas , eggs. celeriac, onions, diced boiled chicken or sometimes ham, tart apples and mayonnaise, with salt, pepper, and mustard added to enhance flavor, dressed with mayonnaise.
Today I have made an eggless Russian salad. I used paneer and cream cheese to make a creamy dressing instead of using mayonnaise.
This is a very healthy, wholesome, colourful and a delicious salad which can be had as a meal itself:)
Ingredients
Boiled and diced Potatoes- 2 cups
Diced and steamed carrots- 1 cup
Diced and steamed French beans- 1 cup
Diced Green Capsicum- 1/2 cup
Diced Yellow capsicum- 1/2 cup
Diced Red capsicum- 1/2 cup
Boiled fresh corn- 1 cup
Diced Pineapple- 1/2 cup
Diced Apple- 1 cup
Diced Guava- 1/2 cup
Walnuts- few
Lettuce leaves for garnish
For the dressing
Cream cheese- 1/2 cup
Milk- 3/4th cup
Grated paneer- 1 cup
Mustard sauce- 1 tbsp
Pepper- 11/2 tsps
Salt to taste
Lemon juice- 1 tbsp
Olive oil- 2 tbsps
Method
Add all the vegetables and fruits in a big mixing bowl and mix well.
Beat all the ingredients for dressing to a smooth sauce.
Mix the dressing with the salad well and keep it in the refrigerator.
Garnish with walnuts and lettuce leaves and serve cold:)
