I heard about Aamrus aloo for the first time in Chef Venkatesh Bhat’s show. I found it to be very different and interesting.
Now being the mango season, I wanted to try this recipe. As I had not noted down his exact recipe, I browsed the net to find out more about this recipe. I saw Sanjeev Kapoor’s recipe and Nita Mehta’s too. I have combined both and made this dish. And instead of using only potatoes, I have used peas to increase the protein content.
It was a super hit at home. Both my kids loved it and gave a thumps up for this new recipe:)
Boiled and diced potato – 2 cups
Boiled fresh peas- 1 cup
Ripe mango puree – 1 cup
Onion- 3
Melon seeds – 2 tbsp
Yogurt – 3/4th cup
Fresh cream – 2 tbsp
Saffron strands- few
Milk – 1 tbsp
Turmeric powder – 1/2 tsp
Red chilli powder- 1 tsp
Garam masala powder- 1/2 tsp
Jeera – 1 tsp
Cardamom- 2
Cloves – 2-3
Slit green chillies- 3
Grated ginger- 1/2 tsp
Salt to taste
Oil – 1 tbsp + as much required for shallow frying.
For the spice powder
Jeera – 1/2 tsp
Pepper- 1/4th tsp
Cardamom- 2
Cloves – 2-3
Method
Soak the melon seeds in little water for sometime. Grind to a smooth paste and keep it aside.
Soak the saffron in milk.
Peel, wash, chop and grind the onions to a puree.
Shallow fry ( can deep fry too) the potatoes and keep it aside.
Dry roast the ingredients mentioned for spice powder. Cool and grind to powder. Keep it aside.
Heat oil in a pan. Add jeera, cloves and cardamom and sauté for few seconds.
Add the grated ginger and slit green chillies and sauté again for few seconds.
Nos add the onion puree. Sauté till turns light brown.
Add the yogurt ( beaten well), melon seeds paste, red chilli powder and turmeric and mix well. Add 1/2 cup of water, mix again. Let it boil.
Once the oil starts floating on the gravy, reduce the flame. Add the mango puree, shallow fried potatoes and boiled peas. Add salt to taste, mix well and let it cook for few mins.
Now add the ground spice powder, garam masala, fresh cream and saffron crushed in the milk. Mix well. Check for seasonings. Let it simmer for few mins.
Garnish with some fresh cream and serve hot with rotis/ parathas:)
