It is low in Sodium, and very low in saturated fat and Cholesterol. It is also a good source of Protein, Thiamin, Riboflavin, Niacin, Vitamin B6, Calcium, Iron, Magnesium, Phosphorus, Potassium and Copper, and a very good source of Dietary Fiber, Vitamin A, Vitamin C, Vitamin K, Folate and Manganese.
Beans poriyal is a South Indian style dry curry. Steaming is the method of cooking used here and very little oil is used in tempering making it very healthy:)
Ingredients
Beans- 1/2 kg
Oil- 2 tsps
Mustard- 1 tsp
Urad dal ( ulundhu)- 1 tsp
Red chillies- 2
Salt to taste
Grated coconut- 1/2 cup
Method
Wash, string and chop beans finely.
Heat oil in pan. Add mustard. When it starts spluttering, add urad dal and red chillies. Sauté for few seconds and add chopped beans and salt to taste.
Mix well, add 2-3 tbsps of water, reduce the flame, close the pan with a lid and cook till the beans become tender.
Add grated coconut and mix well.
Transfer to a serving dish and serve hot.
