Spinach is known as Palak in Hindi. Low in fat and even lower in cholesterol, spinach is high in niacin and zinc, as well as protein, fiber, vitamins A, C, E and K, thiamin, vitamin B6, folate, calcium, iron, magnesium, phosphorus, potassium, copper, and manganese.
Walnuts are high in protein, vitamins, omega 3 fatty acids, trace minerals, lecithin and oils. Compared with other nuts, which typically contain a high amount of monounsaturated fats, walnuts are unique because the fats in them are primarily polyunsaturated fatty acids (PUFAs) and are the only nut with a significant amount of alpha-linolenic acid. Moreover, walnuts have insignificant amounts of sodium and are cholesterol free.
Combination of Palak and walnuts makes the salad very healthy. To make it more interesting, I baked the palak to make it crisp:)
Ingredients
Chopped Palak( spinach)- 4 cups
Chopped onions- 1/2 cup
Chopped walnuts- 1/2 cup
Salt to taste
Pepper powder- 1/2 tsp
Lemon juice- 1/2 tsp
Method
Wash and drain this chopped Palak. Cook it on a pan till it becomes dry and bake it in an preheated oven( 250* cel) for 20- 25 mins or till it becomes crisp. Let it cool.
Mix chopped onions, crisp Palak and chopped walnuts well. Add salt, pepper powder and lemon juice, mix well and serve immediately 🙂
