This is a simple, easy to make, healthy and wholesome sandwich and a perfect breakfast option as it has carbohydrates, protein, minerals, vitamins and fibre.
The soft and creamy paneer and cucumber layer is very well complimented by the crisp and tangy carrot and ketchup layer. It also is very pleasing to look at. Am sure almost all kids will be very willing to take as school lunch too. My daughter loved it:)
It will be a good option for kids parties too as it can be made well in advance.
Ingredients
Whole wheat bread slices – 12
Cucumber – 1
Crumbled paneer – 1/2 cup
Carrot – 1
Tomato ketchup – 2-3 tbsps
Salt to taste
Pepper powder – 1/2 tsp
Butter – as much required to spread on the bread
Method
Wash and peel the cucumber. Scoop out the seeds and discard them. Grate the cucumber and squeeze it to remove the water content from the cucumber.
Mix the cucumber with the crumbled paneer. Add salt to taste and pepper powder. Mix well again and keep it aside.
Wash and grate carrot. Add tomato ketchup to the grated carrot and mix well. Keep it aside.
Cut off the edges of the bread slices.
Spread butter on all slices.
Spread the cucumber paneer mixture on one slice. Cover it another slice of bread. Now spread the carrot mixture on this slice and cover with a slice of bread ( buttered side must be inner side).
One set of sandwich is made. Similarly make three more sets.
Cut diagonally and serve:)
