Mango is known as manga in Tamil and Aam in Hindi.
Manga thokku is a very traditional instant, cooked pickle variety from Tamil cuisine.
Raw and sour mangoes are grated and is cooked in sesame oil, seasoned with red chilli powder and salt.
As not much of salt and oil is used for making this variety of pickle, it does not have a very long shelf life. It will stay fresh for week to 10 days and has to be refrigerated.
It can be served with curd rice or rotis/ parathas or even idli and dosa.
It is my family’s favourite pickle, especially my daughter:)
Grated raw mango- 5 cups
Sesame oil- 1/2 cup
Mustard – 2 tsps
Fenugreek ( methi/ vendayam) – 1 tsp
Asafoetida( hing/ perungayam) – 1/2 tsp
Red chilli powder – 8-10 tsps
Turmeric powder- 1/2 tsp
Salt to taste
Sugar – little
Method
Heat oil in a heavy bottom pan.
Add mustard. When it starts spluttering add fenugreek and hing. Sauté for few seconds.
Add the grated mango and mix well. Add red chilli powder, turmeric powder, salt snd sugar( optional). Mix well.
On a medium flame, cook the mangoes till they become soft, oil starts floating and the cooked mixture starts leaving the pan ( will approximately take 15-20 mins).
