Nuts are bite-size nutritional powerhouses are packed with heart-healthy fats, protein, vitamins and minerals.
Today, for a change I made pulao with nuts instead of vegetables. Nuts added a good crunch to the pulao. I was happy when everyone at home said that they liked it:)
Basmati rice – 11/2 cups
Butter -1 tbsp
Ghee – 2 tsps
Mixed sliced nuts – 1 cup
Bay leaf – 2
Cloves – 4-5
Cardamom- 3-4
Cinnamon – 1 inch stick
Salt to taste
Method
Wash and soak basmati rice for 15-20 mins.
Heat the butter in a heavy bottom pan.
Add bay leaves, cinnamon stick, cloves and cardamom. Sauté for few seconds.
Drain the soaked rice completely and add to the pan. Mix well and sauté for few mins. Add 3 cups of water and salt to taste. Mix well. When the water starts boiling, reduce the flame, close the pan with a lid and cook till the rice becomes soft and dry.
Heat the ghee in a pan. Add the sliced nuts and sauté till they turn golden.
Add it to the rice, mix well and serve hot with dal or vegetable gravy or paneer:)
