My daughter wanted paratha for school lunch today. I had seen this recipe in Tarla Dalal’s website. It was something new and interesting. Made few changes in her recipe and made it today. It came out really well. It certainly is a good option for lunch box:)
Ingredients
Whole wheat flour – 11/2 cups
Finely chopped onions – 1 cup
Grated processed cheese – 1/2 cup
Chopped coriander leaves- 2 tbsps
Oil – 1 tsp
Melted ghee- 1 tbsp + as required for making the parathas
Pepper powder – 1/2 tsp
Cumin ( jeera) powder- 1 tsp
Garam masala powder- 1/2 tsp
Dry mango powder – 1/4th tsp
Salt to taste
Method
Heat oil in a pan. Add the finely chopped onions. Sauté for till onions turn pink. Now add pepper powder, cumin powder, garam masala powder and dry mango powder and salt to taste. Mix well and sauté for few mins.
Cool this onion mixture. In a large bowl, add this mixture, while wheat atta, grated cheese, chopped coriander leaves and melted ghee. Mix very well. Add the required amount of water and knead to a smooth dough.
Rest the dough for 15-20 mins.
Roll it into parathas, shallow fry till both sides turn golden using ghee.
Serve the parathas hot with pickle and yogurt 🙂
