I wanted to make paneer cheese paratha for my daughter’s school tiffin. Instead of making as usual paratha , today I made it as flower cups and stuffed it with paneer and cheese.It was more fun making this than the usual paratha;)
Ingredients
For the flower cups
Whole wheat flour – 1 cup
Ajwain – 1/2 tsp
Baking powder- 2 pinches
Olive oil – 1 tbsp
Salt to taste
For the paneer stuffing
Crumbled paneer – 3/4th cup
Amul processed cheese cubes – 2
Oregano – 1/2 tsp
Pepper powder- 1/2-1 tsp
Salt to taste
Method
To make the stuffing
Grate the cheese cubes. Mix it with crumbled paneer, oregano, pepper and salt to taste well. Keep it aside.
To make the flower cups
Knead all the ingredients mentioned for the cups to a smooth dough and rest it for 30 mins.
After half an hour, divide the dough into 15-18 portions and roll each portion into a smooth ball.
Take one portion, dust with flour and roll into a thin, uniform circle.
Place a small portion of filling in the centre.
Cut and fold into flower shaped cup as shown in the pic.
Make similar cups with rest of the portions.
Preheat the oven to 180 deg Celsius.
Place it in muffin trays and bake it in the preheated oven for 12-15 mins.
Serve the flower cups warm with ketch up or any fruit chutney:)
