This is a very easy to make, crisp and yummy Sundal which can be made in jiffy. It’s a very handy recipe when you have to entertain sudden guests during Navrathri:)
Ingredients
Grated carrots – 1 cup
Roasts peanuts – 1 cup
Oil – 2 tsps
Mustard – 1 tsp
Red chillies – 3-4
Hing – 2 pinches
Curry leaves – few
Turmeric powder – 1/4th tsp
Red chilli powder – 1/2 tsp
Coriander powder ( dhania) – 1 tsp
Grated coconut – 2 tbsps
Salt to taste
Method
Heat oil in a pan. Add mustard. When it starts spluttering, add red chillies, hing and curry leaves. Sauté for few seconds and then add the grated carrots. Sauté for few seconds.
Add the turmeric powder, red chilli powder, coriander powder and salt to taste. Mix well and sauté for few mins. Check for the seasonings. Now add the roasted peanuts and mix well. Sauté for a min.
Take it off the flame. Add the coconut and mix well and enjoy this healthy and yummy Sundal 🙂
