My son’s friend has come home to stay with us. He wanted me to make North Indian cuisine for lunch.
So, I made bhindi masala and plain kulcha. I made bhindi masala after a very long time. It’s a very simple recipe and it really came out very well 🙂
Ingredients
Bhindi ( lady’s finger/ vendakai) – 1/2 kg
Peeled shallots ( sambar onions) – 1 cup
Oil – 2 tbsps
Cumin seeds – 1 tsp
Turmeric powder – 1/2 tsp
Red chilli powder- 1 tsp
Coriander powder( dhania)- 2 tsps
Cumin powder ( jeera)- 1+1/2 tsp
Dry mango powder ( amchur ) – 1/2 tsp
Salt to taste
Chopped coriander leaves – 2 tbsps
Method
Wash, pat dry and cut bhindi into 1+1/2 to 2 inches pieces.
Slice the shallots.
Heat oil in a pan. Add the cumin seeds. When it starts spluttering, add the shallots and sauté till it turns pink.
Add the chopped bhindi and mix well. Sauté for few mins and then add turmeric powder, red chilli powder, coriander powder, cumin powder, dry mango powder and salt to taste.
Mix well and sauté for few mins. Reduce the flame, close the pan with a lid and cook till the bhindi is cooked soft.
Garnish with chopped coriander leaves and serve hot with roti/ paratha/ rice.
