Today, I am celebrating the first anniversary of my blog. I started blogging 13th December 2014. I have been posting recipe every single day till last week. I couldn’t continue to post due the floods and after effects.
Today, I made this simple, soft, fragrant ,melt in mouth and delicious cake to celebrate my blogging journey , to treat my school juniors who have been enthusiastically volunteering for the relief activities and also to celebrate the spirit of Chennaites, for the way everyone has braved this flood, reaching out to others and helping each other.
Love you and God bless you all!
Ingredients
All purpose flour – 2+1/2 cups
Corn flour – 5 tbsps
Condensed milk- 1 tin
Butter ( at room temperature) – 1 cup
Milk – 3/4th cup
Orange juice – 1/4th cup
Baking powder – 2 tsps
Baking soda – 1 tsp
Cardamom powder- 1/2 tsp
Orange colour – 2 drops
Method
Preheat the oven to 180 degree Celsius.
Grease and dust a 9 inch cake pan.
From the 2+1/2 cups of the all purpose flour, remove 5 tbsps of the flour.
Add 5 tbsps of corn flour, baking powder and baking soda and sieve them together.
Beat together butter, condensed milk, orange juice and milk till it becomes smooth and fluffy. Add the flour mixture, cardamom powder and orange colour to this and beat again till everything is mixed well and forms a smooth batter.
Pour the batter into the greased and dusted pan and bake in the preheated oven for 50-60 mins or till its done ( if you insert a tooth pick, it should come out clean).
Remove the cake from the pan and let it cool. Dust it with icing sugar and serve the cake warm or at room temperature:)
