I had bought paneer and bread yesterday as I had planned to make paneer sandwich for today’s breakfast.
In the morning, when I opened the fridge, the first thing that I saw was fresh mint leaves and fresh, colourful capsicums. It acted as an instant inspiration to make paneer tikka and since I had to make breakfast, I made these lovely, healthy, wholesome and yummy tikka sandwiches.
Needless to say, my family devoured the sandwiches as everyone is very fond of paneer tikkas:)
Ingredients
Whole wheat bread – 1 loaf
Butter – 3 tbsps
For the paneer tikka

Paneer – 200gms
Onion – 1 big
Red capsicum- 1
Green capsicum – 1
Oil – 4-5 tbsps
For the marinade

Pudina ( mint leaves) – 1 cup
Coriander leaves ( dhania) – 1/2 cup
Green chillies – 3-4
Jeera ( cumin seeds)- 1 tsp
Lemon juice – 1 tsp
Cashew nuts – 1 tbsp
Chat masala powder – 1/2 tsp
Salt to taste
Sugar – 1/4th tsp
Oil – 2 tsps
Yogurt – 1/2 cup
Method
Cut the paneer, onion and capsicums into squares.
To make the marinade

Grind all the ingredients mentioned except yogurt to a smooth paste. Mix it well with the yogurt.
Add the paneer and vegetable squares and mix gently.
Let it marinate for 30-45 mins ( keep it in the refrigerator).
To make the sandwich

Arrange the marinated paneer and vegetables in a skewer.
Heat a pan. Add the oil and spread well.
Grill the paneer and vegetables till it turns golden. Turn the skewers gently and grill the tikkas on all sides.
Cut the corners of the bread slices. Apply butter and some marinade on the bread.
Arrange the tikkas on the slices and make the sandwich.
Grill the sandwiches and serve it hot with green chutney and ketchup:)
