Broccoli Paratha

Parathas are my daughter’s favourite food for school tiffin. She says it’s non messy and that she finds it very easy to eat. I make Parathas once a week at least. So, I always try to make different stuffings. Few days back, I made these delicious Broccoli Paratha. As always, it’s a very easy to make recipe and wholesome food. It came out very well and my family loved it.

Broccoli which belongs to the cauliflower family, is available everywhere. It’s slightly on the expensive side though.
Broccoli is a rich source of dietary fibre, Vitamin C and Vitamin K. Not rich in protein as claimed by many. It’s has lot of moisture content. Not much of cooking is required. Just steamed or grilled broccoli itself tastes awesome.
Ingredients

For the stuffing

Grated broccoli- 2 cups
Finely chopped onion- 1/2 cup
Oil – 2 tsps
Turmeric powder – 1/4th tsp
Red chilli powder- 1 tsp
Cumin powder ( jeera)- 2 tsps
Dry mango powder ( amchur) – 1/2 tsp
Garam masala powder- 1/2 tsp
Salt to taste
For the dough

Wheat flour – 2 cups
Ghee – 1 tsp
Ajwain ( omam)- 1/2 tsp
Salt to taste

Ghee – as much required to make the Parathas.

Method

To make the dough

Add wheat flour, ajwain, ghee and salt to taste in a mixing bowl. Mix well. Add the required amount of water and knead to a soft dough. Cover and let it rest for 30 mins.
Divide the dough into 8 portions.

To make the filling

Heat oil in a pan. Add chopped onions and sauté till it turns pink.
Add the grated broccoli and sauté for few mins.
Add turmeric powder, chilli powder, cumin powder, dry mango powder and salt to taste.
Mix well and sauté for few mins till the broccoli is just cooked.
Add garam masala, mix well and take it off the gas.
Let it cool. Divide the filling into 8 portions.

To make the Paratha

Take one portion of the dough. Dust it with flour and roll into a small circle.
Keep the filling in the centre, cover from all sides and make it into a smooth ball.
Dust again and roll it to a circle.

Cook on a hot tawa, applying ghee on both sides till it turns crisp and golden.
Serve the Paratha hot with pickle of your choice and yogurt.
