I just gave in to my imagination today and made this. When it comes to baking, am generally little hesitant in trying my own recipe as I have very limited knowledge and experience.

But today was an exception. I made this for daughter’s school tiffin.
She didn’t want the usual Idli/
paratha/upma/. She was ok with sandwich, but bread was not there.

I remembered seeing a snack named pizza pops in a cookery show. Since I had not noted down the recipe, I couldn’t recollect the exact ingredients and the measurements used. I took the idea from that show and have created my own recipe.

The whole process was very exciting-visualising, creating the recipe, cooking and plating. I really enjoyed and my kids loved it:)

Ingredients

For the dough

Whole wheat flour- 1 cup+ for dusting
Active Dry yeast- 1 tsp
Sugar- 1 tsp
Warm water- 1/4th cup
Salt to taste
Oil- 2tbps

For the filling

Oil- 2 tsps
Boiled green peas- 1/2 cup
Basil, tomato and garlic paste- 2tsps
Finely chopped onion- 1/4th cup
Salt to taste
Jeera powder- 1/2 tsp
Red chilli powder- 1/2 tsp
Dry oregano- 1/2 tsp
Grated mozzarella cheese- 3/4th cup

Method

For the dough

Dissolve yeast and sugar in warm water. Let it rest for 20 mins.

Mix salt and oil with the whole wheat flour. Add the yeast water and knead it to smooth dough. Add more warm water if required for kneading. Rest the dough for 20-30 mins.

To make the filling

Heat oil in a pan. Add the chopped onions and sauté till it becomes pink. Add the basil, tomato garlic paste and sauté for 1 more min.
Add the boiled peas, mix well and crush it coarsely with the ladle. Add salt to taste, jeera and chilli powder, mix well and cook for few more mins. Add oregano and mix well. Remove and keep it aside.

To make the Potli

Preheat the oven to 180*C
Dust the rolling board and roll out the dough as you would roll a paratha.
Using a katori ( small round bowl), cut into circles.

Place the filling in the center, top it with some grated cheese. Gather the dough along the corners and bring it to the centre and shape it into a potli( bundle) Let there be a tiny gap in the middle.

Arrange the potlis in a tray dusted with flour and bake it the preheated oven for 15-16 mins.

Remove from the oven and let it rest for few mins.
Serve it hot with ketchup or dates chutney 🙂
