Badhusha is one of my most favourite traditional sweet. I learnt this from Chitra mam, my veena teacher few years back in Muscat. It was during Diwali time.
It’s a simple recipe once you get the hang of it.
Along with the traditional Badhusha, today I have made Chocolate Badhushas ( badhusha topped with chocolate sauce). I made it specially for my kids as they don’t like the traditional Badhusha.
It was a big hit with them and I was very happy when they said that it was tasting like Dunkin Donuts:)
Ingredients
Maida ( all purpose flour) – 2 cups
Cold butter- 1/2 cup
Cooking soda- 1/2 tsp+ a pinch
Butter milk- 1/2 cup + 1 tbsp
Sugar- 2 tsps
Oil- to deep fry
For the sugar syrup
Sugar- 3/4th cup
Water- 1 cup
Saffron- 3-4 strands
Milk- 1 tbsp
Lemon juice- 1/2 tsp
For the Chocolate sauce
Butter- 1 tbsp
Chopped chocolate- 1/2 cup
Milk- 2 tbsps
Method
Add the cold butter to maida and mix it with your finger well to get crumbs like texture. Do not knead.
Now add sugar, cooking soda and mix well.
Add butter milk little at a time and knead to a soft pliable dough. Cover it and rest for 10- 15 mins.
Heat sugar and water in a pan. Stir till the sugar dissolves completely.
When it starts boiling, add a tbsp of milk.
After few seconds, the scum ( dirt) will start floating on top. Collect and discard.
Strain the sugar syrup to get rid of all the scum.
Wash the pan, add the syrup back to it. Add few strands of saffron and let it boil till it reaches one string consistency. Once the consistency is reached, switch off the gas.
Add the lemon juice and mix well. This will stop the crystal formation in the syrup.
For the Chocolate sauce
Micro wave everything together for 1 min.
Remove and mix well to get a sauce consistency. If required microwave for few more seconds. Mix well to get a smooth sauce and keep it aside.
To make the Badhusha
After resting the dough, divide it into 30 portions.
Roll each portion into a smooth ball and flatten it. Press it in the middle with your thumb to make a dent.
Deep fry the badhusha in batches in very low flame. Its very important to cook in low flame so that it will cooked till inside. Prick the badhusha while cooking. This will also ensure that it will get cooked well in the inside.
Cook till turns golden brown.
Remove from the oil, drain completely and add it to the sugar syrup.
Fry all the badhushas. Put half of them in sugar syrup. Let it soak for few mins.
Remove and arrange them in a tray. Sprinkle some flaked nuts on top. Let it dry.
Serve after 1-2 hrs:)
For the Chocolate Badhusha
Arrange the badhushas in tray. Top them with spoonful of chocolate sauce and some Choco chips. Leave it to set for sometime and then serve:)
Can we add cold ghee instead of cold butter in the badhusha
Cold butter is best to gets layers Ritu:)

Thanks Anu. Hope you had a great Diwali! Yes the badhusha came out well but was not as crisp. I think either added a wee bit more butter or my sugar syrup was not so thick enough. But on the whole a delightful treat! Thanks for making it possible. I would not have tried otherwise. ?
