My son is not very fond of vermicelli Upma. I didn’t have much choice today. So I made it in different way. Really glad that I did. He liked it very much. And I enjoyed making this colourful and healthy breakfast:)
Ingredients
Vermicelli ( semiya) – 11/4th cup
Sliced onions- 1/2 cup
Carrot cut into strips- 1/2 cup
Capsicum cut into strips- 1/2 cup
Curry leaves – few
Oil- 2 tbsps
Mustard- 1 tsp
Split urad dal- 1 tsp
Chana dal- 1 tsp
Slit green chillies- 3
Crushed pepper- 1 tsp
Salt to taste
Method
Roast the vermicelli till it turns golden brown.
Add slightly salted boiling water to the vermicelli till it gets immersed. Close it with a lid. Let it stand for 10-15 mins.
Drain the excess water. Wash the vermicelli with cool water to stop further cooking. Drain again and keep it aside.
Heat oil in a pan. Add mustard. When it starts spluttering, add urad dal, chana dal, curry leaves and green chillies. Sauté for few seconds, add sliced onions. Sauté till it turns pink.
Add the carrots and capsicum and salt to taste. Sauté for few mins till the vegetables are cooked but remains crisp. Add crushed pepper and mix well.
Now add the cooked vermicelli and stir for a min or two on a high flame.
Garnish with coriander leaves and serve hot with pickle and yogurt:)
