Today, I didn’t had to pack lunch. Both kids were at home and my husband had a lunch meeting. So, decided to make an interesting one pot meal.
My daughter is very fond of American Chopsuey. That’s her standard order in Chinese restaurants. I decided to make that as a treat for her ( she has been studying very hard for her exams).
American Chopsuey is an Indo Chinese dish in which crisp fried noodles are served with sweet and sour vegetable sauce( vegetarian version).
It’s very simple to make. One just need to have all the ingredients and it does take some time. But it’s worth the effort. My kids loved it. Happy kids and happy mom:)
For the fried noodles
Noodles – 300 gms
Oil – as much required for deep frying
For the vegetable topping
Sesame oil – 2 tbsps
Sliced spring onions( white) – 1/2 cup
Onion cut into squares – 1/2 cup
Capsicum cut into squares – 1 cup
Cabbage cut into squares – 1 cup
Sliced carrot – 1 cup
Chopped beans ( 1 inch) – 1/2 cup
Chopped spring onion greens – 1/2 cup
Chopped garlic – 1 tsp
Chopped ginger – 1/2 tsp
Pepper powder – 1- 1+1/2 tsp
Vinegar – 1 tsp
Soya sauce – 1 tsp
Salt to taste
Sugar – 1 tsp
Tomato sauce – 1/2 cup
Corn flour – 2 tbsps
Water – 3 cups
To make the fried noodles
Boil the noodles in lots of water till it’s cooked soft.
Drain it and wash it under running water to stop further cooking. Drain it completely and let it dry in a colander for some time ( instead you can spread it on a kitchen towel too).
Deep fry the noodles in batches till it becomes crisp and keep it aside.
To make the vegetable topping
Heat some water in a pan. When it starts boiling, add the cut beans. Cook for few mins ( just blanch it). Drain and keep it aside.
Heat the oil in a pan. To the hot oil, add the chopped garlic and ginger. Sauté for few seconds and then add the sliced spring onion white and the onion squares.
Sauté till the onions turn pale. Add the sliced carrots and sauté for few mins. Then add the capsicum and continue to sauté for few more mins.
Now add the cabbage and blanched beans. Sauté till the vegetables are just cooked. Do not over cook the vegetables. It should be crunchy.
Add salt to taste, pepper powder, sugar, vinegar and soya sauce. Mix well. Check the seasonings. Sauté for few mins.
Mix the corn flour, water and tomato ketchup well. There should not be any lumps and add
it to the vegetables. Mix well and check for the seasonings again. Add 1/2 of the spring onions green and mix well. Stir and cook for few mins. Then cover the pan with a lid and cook for few mins.
To serve the chopsuey
Place some fried noodles on a serving plate.
Top it with generous amount of vegetables. Garnish with some spring onion greens and some crisp fried noodles and serve immediately:)
