Paneer Tikka Fried Rice

Few days back, I made this for lunch as I wanted to do an one pot meal. I had been thinking of trying out this recipe for sometime. Inspiration for this recipe is the Grilled Paneer Tikka Sandwich which I had made few months back. As usual the recipe fell in place as I started the preparation.
It’s very easy to make and it came out very well, more yummier than I had expected. I really enjoyed making this as everything turned out just the way I had visualised. Panner tikka is my family’s most favourite and needless to say, they really loved it 🙂


Ingredients

Basmati rice – 1+1/2 cups

Butter – 1 tbsp

Ghee – 4-5 tbsps

Paneer – 200 gms

Onion – 1

Capsicum – 1

Chopped coriander leaves – 2 tbsps

For the marinade

Yogurt – 5 tbsps

Coriander ( dhania) powder – 2 tsps

Cumin ( jeera) powder – 1 tsp

Red chilli powder – 1 tsp

Kashmiri red chilli powder- 1/2 tsp

Turmeric powder – 1/2 tsp

Garam masala – 1 tsp

Sugar – 1/2 tsp

Salt to taste

Method

Add all the ingredients mentioned for the marinade in a bowl, mix well and keep it aside.

Cut paneer into squares. Peel, wash and cut onion into squares. Wash and cut capsicum into squares.

Mix the paneer and the vegetables with the marinade well and let it rest for 30- 45 mins.


Wash and soak basmati rice for 15-20 mins.

Heat 1 tbsp of butter in a pan. Drain the rice completely and add to the melted butter and sauté for a min. Add 2+3/4th cups of water and salt to taste and mix well.

Close the pan with a lid, reduce the flame and cook till the rice becomes soft and dry. Fluff the rice gently and keep it aside.

Heat a grilling pan. Brush it generously with ghee. Add some the paneer and the vegetables and grill till it turns crisp and golden. Grill rest of the paneer and vegetables in batches and keep it aside.

Spread the rice on the grilling pan and add 1 tbsp of ghee. Mix the rice gently. Add the grilled paneer and the vegetables, mix gently and sauté on a high flame for a min.


Garnish with coriander leaves and serve the rice hot with any raita of your choice:)
